While I was unpacking….

…. and rinsing off my seashells that I collected and others also collected for me at the beach….

…..Kenny was busy making fruitcake!

After Christmas he gathered up lots of “fruitcake stuff” on sale…..he was off work yesterday and today, so this evening he decided to whip up some fruitcake!

The hardest part was finding a container large enough to mix everything together in!

First he mixed together the dry ingredients.

1 lb. Ritz crackers, crumbled

1 lb. candied pineapple

1 lb. candied cherries

1 box seedless raisins

4 c. chopped pecans

1 c. walnuts

7 oz. flaked coconut

Cook 1 lb. marshmallows and 1 tall can Pet milk (evaporated milk) until melted.

Pour melted marshmallow mix over other ingredients that you have mixed together in a very large mixing bowl.

Mix all together and mash down in an oblong pan, 13 x 9 x 3 lined with waxed paper, or into paper lined loaf pans.

Lonnie: “please drop something”

“please, please drop something”

Refrigerate one week.  Then it can be frozen in slices.

Make sure you have someone near to help you “clean up”.

“He didn’t drop anything, but he always shares”

  1. No baking? My husband made fruitcake this year for the first time ~ two different times now ~ until he gets it perfected!!

  2. Sounds tempting--I am one of those oddballs who actually LOVE fruitcake--especially if it's been "marinated" in a little whiskey or rum! I bought a delicious fruitcake at Whole Foods Market this Christmas--love it with my hot tea! I'll definitely try this recipe next Christmas--gotta lose those pounds I put on over the holidays!

  4. *****that is one "interesting" way to make a fruitcake!!! we make a big christmas cake every year and let it marinate from early november to christmas eve. at that time it is covered with a marzipan top and frosted and decorated the next day. great with a cup of tea but the cake is dark and very rich, especially from the whiskey.
we'll have to try this one.

  5. I actually love fruitcake too. I used to make a plum pudding that had to cure from All Saint's Day to Christmas in the fridge. It was great. Full of about 5 different types of liquor, including a bottle of stout! Your recipe is interesting...no baking.
